Jelly roll, baking mat; whatever you call it, it will revolutionize your baking! I never considered myself a ‘serious’ enough baker to own a jelly roll, so when my husband asked that we put one on our wedding gift registry, I turned my nose up at the idea. TRAIL MIX BARS 4 c. old-fashioned oats 1/2 c. shredded unsweetened coconut 1/2 c. raisins 1/2 c. dried cranberries (you can substitute 1/2 c. of your favorite nuts) 1/4 c. flour 1/4 tsp. salt 1/2 c. grapeseed oil (or canola oil) 1/2 c. honey 1 tsp. vanilla extract Preheat oven to 325 degrees. Line 13X9X2 baking pan with a baking mat. Combine the first six ingredients, set aside. In another bowl, mix together the remaining three ingredients. Add the wet mixture to your dry mixture and stir until combined. Press the mixture into your baking pan, and bake for 40 minutes or until golden brown. Cool completely and then cut into sixteen bars.
