Easy, Healthy Trail Mix Bars

BakeitFun Jelly roll, baking mat; whatever you call it, it will revolutionize your baking!  I never considered myself a ‘serious’ enough baker to own a jelly roll, so when my husband asked that we put one on our wedding gift registry, I turned my nose up at the idea.  Years later, with much more cooking experience under my belt, I jumped at the opportunity to try BakeitFun’s Baking Mat. What I didn’t know at the time was that baking mats aren’t just for cookies, they’re great for anything you’re cooking in your oven on a baking sheet!  Gone are the strips of aluminum foil, to which most items stuck anyway; introducing a baking mat to your kitchen will cut down on waste and make it easy to slide baked items off of your baking sheet. BakeItFun-BakingMat Made of food grade silicone-covered fiber cloths, the BakeitFun baking mat eliminates the need for greasing your pan (no more oops! moments after you’ve already begun baking), can be used in both the oven and the microwave, conducts heat for even baking, and is incredibly easy to clean.  When you’re finished using your baking mat, simply wash with warm water, roll up, and store; super easy! I’ve used our baking mat to bake nachos for the family, and was pleasantly surprised to be able to easily slide them off of the pan after cooking; no more sticky cheese messes!  My latest baking mat endeavor are tasty whole-grain trail mix bars; you can find this simple recipe below.

TrailMixSnackBarsRecipe TRAIL MIX BARS 4 c. old-fashioned oats 1/2 c. shredded unsweetened coconut 1/2 c. raisins 1/2 c. dried cranberries (you can substitute 1/2 c. of your favorite nuts) 1/4 c. flour 1/4 tsp. salt 1/2 c. grapeseed oil (or canola oil) 1/2 c. honey 1 tsp. vanilla extract Preheat oven to 325 degrees.  Line 13X9X2 baking pan with a baking mat.  Combine the first six ingredients, set aside.  In another bowl, mix together the remaining three ingredients.  Add the wet mixture to your dry mixture and stir until combined.  Press the mixture into your baking pan, and bake for 40 minutes or until golden brown.  Cool completely and then cut into sixteen bars.
